Vegan Baileys Muffins.
Now we all love a simple sponge cake, be it chocolate or vanilla. but when there's a little twist added it takes the simple cake to a WHOLE other level. Theses cupcakes are perfect to share with your friends or not to share all! ( I ate five back to back and I'm not ashamed of that at all.)
Also I am really happy that massive companies such as Baileys and many more are seeing that there is a demand for veganism. Due to there being more vegan products in stores now it makes it more easier to shop vegan and become vegan.
Ingredients:
300g Flour
150g Sugar
1 Tablespoon Egg Replacer ( or you can use Applesauce)
30ml Vegan Baileys
20ml Oil
300ml Soya or Almond
3 Teaspoons baking powder
1 Teaspoon bicarbonate soda
1 Teaspoon of vanilla extract
25g chocolate chips
Method:
Step 1 - preheat the oven 350 c Gas mark 4.
Step 2 In a large bowl mix together all the dry ingredients and set aside.
Step 3 - In another bowl add all the wet ingredients and mix till everything is well incorporated.
Step 4 Add the wet mixture to the dry and mix well and then add chocolate chips and fold in the mixture till all the chocolate chips are covered.
Step 5 Pour the mixture into each muffin moulds.
Step 6 Bake for 25 - 30 minutes. Place toothpick inside one of the muffins if the toothpick come out clean take the muffins out of oven and place them on a cooling rack to cool down.
Enjoy with a lovely glass of Baileys and ice.
